Our Chief wine maker – Maître de Chai – is a vintner. His father was a vintner also, as was his grandfather.
The vine is his passion. He knows wine is principally made on the vine. He gets up at sunrise to witness the rebirth of nature every day and to work in the fresh morning air.
He surveys the vines day after day, row after row, to understand and witness their evolution, from their flowering to the maturation of the grape. He monitors growth, prevents fungal attack, controls the number of grapes per foot in order to ensure the correct aromatic concentration of the juice and he prunes the canopy in order to optimise photosynthesis.
It is only when work on the vine is done, and done properly, that he will venture into the cellar to supervise the Vinification of the wine that is destined for you.
